Wellbe Chana Dal is unpolished to help retain its nutritive value. Polishing is a multi-level process done to make dal look shiny and appealing. However, the polishing process strips the dal of all its nutrients.

Studies show that metanil yellow and an inorganic dye known as auramine may be frequently added to enhance the color of conventionally processed chana dal. Studies have shown that metanil yellow is toxic to humans while auramine is a carcinogen.
